Ysbrydnos – Twelve Accounts from a Darker Wales

A collection of twelve handmade chocolates inspired by the darker folklore, legends and supernatural traditions of Wales. Ysbrydnos — a spirit night, when the boundary between this world and the other is said to grow thin — journeys through ancient mountains, churchyards, old roads and walled towns, bringing together omens, monsters, tricksters and tales that have endured for generations.

Each chocolate interprets one of these stories through flavour, turning some of Wales’s strangest legends into twelve unsettling little encounters.

The Twelve Chocolates

Afanc – The Water Monster – Milk and dark chocolate with a rich Conwy Porter caramel; deep, malty and slightly bittersweet, inspired by the legendary creature said to lurk beneath Welsh waters.

Gwrach y Rhibyn – The Witch of Rhibyn – White chocolate with blackberry, blackcurrant and fresh sage; dark hedgerow fruits and herbal notes inspired by the terrifying Welsh death-omen whose cry was said to foretell disaster.

Cadair Idris – Idris’s Chair – Milk chocolate ganache with Bodnant wildflower honey and mead; warm, floral and gently boozy, inspired by the mountain where legend says those who sleep overnight awake either a poet or a madman.

Angelystor – The Death-Calling Spirit – Milk chocolate ganache with absinthe and pine nuts; herbal, aromatic and slightly mysterious, inspired by the spirit said to name those destined to die beneath the ancient yew at Llangernyw.

Blodeuwedd – Flower Face – Dark chocolate with elderflower gin; floral, fragrant and deceptively elegant, inspired by the woman created from flowers whose story ends in betrayal, murder and transformation.

Pwca – The Trickster – White chocolate chilli truffle with red chilli and cayenne; sweet and innocent at first, with a heat that arrives unexpectedly, inspired by the shape-shifting spirit said to confuse travellers and lead them from their path.

Tylwyth Teg – The Fair Folk – Milk chocolate with popping candy; playful, sparkling and mischievous, inspired by the beautiful but unpredictable Fair Folk of Welsh legend.

Cŵn Annwn – The Hounds of the Otherworld – Dark and milk chocolate with black treacle and whisky; deep, smoky and warming, inspired by the spectral hounds said to hunt through the night from the Welsh Otherworld.

Canwyll Corff – The Corpse Candle – Toasted white and milk chocolate with caramel and smoked salt; rich, buttery and gently smoky, inspired by the mysterious lights believed to travel the route a funeral would later take.

Caeth – Contained – Milk chocolate with pear pâte de fruit; soft, mellow and deceptively gentle, inspired by our own Conwy tale of an ancient presence trapped within the town walls — something the walls were built not to keep out, but to keep in.

Mari Lwyd – The Grey Mare – Milk chocolate with crab apple and peppermint; sharp, fresh and cool, inspired by the eerie horse-skull figure of Welsh tradition that arrives at the door demanding entry.

Bendigeidfran – The Severed King – Dark chocolate with raspberry; rich, sharp and blood-red at its heart, inspired by the giant king whose severed head continued to speak long after his death.
